Lembas was one of the first things on my list of Middle Earth foods to make. Lembas is a special food made by the elves that is nutritious and will stay fresh for months when wrapped in its mellorn leaf wrapping. It was used for sustenance on long journeys.
LEMBAS
2 1/2 C Flour
1 TBSP baking powder
1/4 tsp salt
8 TBSP cold butter, cut in cubes
1/3 C sugar
Zest from 1 lemon
1/2 tsp honey
2/3 C milk
1/2 tsp vanilla
Preheat oven to 425
In a mixer bowl fitted with a paddle attachment combine flour, baking powder, salt and butter and mix on medium speed until crumbs are lentil size.
Zest lemon directly into sugar and add honey. Add to flour mixture.
Add milk and vanilla and mix until combined.
Roll out dough on lightly floured surface until 1/2 inch thick. Cut into rectangles (mine were 3"x4") and score with an X through the dough. Place on baking sheet and bake for 10-13 minutes (depending on the thickness) until lightly golden and set.
"Lembas. Elvish waybread. One small bite is enough to fill the stomach of a grown man."
